FRUITS AND VEGETABLES, IN ALL THEIR DIVERSITY, ARE A MULTICOLORED KALEIDOSCOPE OF TASTE AND BENEFIT. IT MAKES YOU WANT TO ARRANGE IT ALL DECORATIVELY ALONG THE COLOR SPECTRUM. BUT WE RUN INTO A PROBLEM SOMEWHERE IN THE SECOND HALF OF THAT SPECTRUM: WE HAVE AN ABUNDANCE OF RED, ORANGE, YELLOW, GREEN, AND EVEN PURPLE FRUITS. BUT BLUE—AND ESPECIALLY LIGHT BLUE—FRUITS OR VEGETABLES ARE ALMOST NONEXISTENT. PLUMS, AND SOME EGGPLANTS. PERHAPS IT’S BECAUSE BLUE IS THE COLDEST COLOR, AND THE SKY CLAIMED IT FOR ITSELF.
